I apologise if this is not something you can't help with, but here goes...

When changing scan type with Extensifier (for example, Interlaced tff to progressive), current versions of mediainfo registers the new scan type which is great, but also now lists "Original Scan Type: Interlaced". This is not ideal. I understand that this may just be a mediainfo interpretation of header and extensions and completely beyond your control, but just wondering if you could shed any light on this? Any help would be seriously appreciated.

This is new to me.
QT stores the scan type in an image description extension.
I suppose the original scan mode is encoded somewhere in the original mpeg4 movie.
I don't know how to change that, sorry.
